Peel the potatoes and cut them into half-inch slices.

Parboil the potato slices in salted water with 2 teaspoons of distilled white vinegar and 2 teaspoons of baking soda for 3 to 4 minutes.

Let the parboiled potatoes cool and dry completely.

Heat cooking oil in a pot to around 150°C for frying.

Fry the potato slices in batches for 4 to 5 minutes until they start to get a tiny bit of color.

Prepare the taco filling by sweating chopped bell peppers, onion, and pickled jalapeños in oil until softened.

Add 750g of ground beef to the pan and break it down finely while cooking.

Mix taco seasoning (1 tbsp each of cumin, paprika, chili powder, onion powder, garlic powder, and half a teaspoon of mixed herbs) into the cooked beef, reserving 1 to 2 tablespoons for later.

Add 2 to 3 tablespoons of tomato puree and 2 tablespoons of ketchup to the beef mixture and simmer.

Prepare the taco sauce by mixing 2 tablespoons of ketchup, 1 tablespoon of vinegar from pickled jalapeños, 1 tablespoon of reserved taco seasoning, and at least 8 tablespoons of mayonnaise.
