Bring a large pot of generously salted water to a boil.

Add 8 oz of farfalle pasta and cook until al dente, about 9 to 10 minutes.

In a large skillet over medium to medium-high heat, add 1 lb of ground beef and sauté, breaking it up with a wooden spoon for about 4 to 5 minutes until no longer pink.

Reserve about half a cup of pasta water before draining the rest.

Once the meat is semi-cooked, add 1 medium sized chopped onion, 1 tbsp red pepper paste, 1 tsp onion powder, 1 tsp ground cumin, 2 tsp sweet paprika, 1/2 tsp kosher salt, and 1/4 tsp ground black pepper.

Cook, stirring regularly, until the onions are softened and the meat is fully cooked, about 5 to 6 minutes, using reserved pasta water to keep the sauce moist as needed.

In a bowl, combine 1 cup of Greek yogurt, 2 cloves of minced garlic, 1 tbsp of lemon juice, and 1/2 tsp of kosher salt. Whisk until smooth.

In a small skillet, melt 4 tbsp of unsalted butter over medium heat. Once melted, add 1 tsp of sweet paprika, 1/4 tsp of red pepper flakes, and 1/2 tsp of kosher salt. Stir until bubbly, about 1-2 minutes.

To assemble, place some cooked pasta on a plate, top with 4 tbsp of yogurt sauce and 2/3 cup of cooked beef, then drizzle with 1 tbsp or more of the butter sauce.

Garnish with dried mint, sumac, fresh parsley, and chopped tomatoes if desired.
