Prepare ingredients: peel and chop 1.5 pounds of potatoes, 1.5 pounds of carrots, and 1.5 pounds of onions. Set aside 1 pound of green peas and 1.5 pounds of mushrooms.

In a bowl, toss 2 pounds of dry chuck beef cubes with 0.5 cup of flour, salt, and pepper until well coated.

Heat 0.5 cup of tallow in a large Dutch oven over medium heat until melted.

Add the floured beef cubes to the pot and brown on all sides, about 5-7 minutes.

In the same pot, add the chopped onions, carrots, and mushrooms, sautéing until softened, about 5 minutes.

Deglaze the pot with 1 cup of port (or substitute with apple juice and water or water with apple cider vinegar), scraping up any browned bits from the bottom.

Return the beef to the pot, then add the potatoes, 8 cups of beef bone broth, bay leaves, and additional salt and pepper to taste.

Bring the mixture to a boil, then reduce the heat to low and simmer for 2-3 hours until the beef is tender.
