Dice the onion.

Place your pan or pot over medium heat and add about a tablespoon of olive oil.

When it’s hot, add in the diced onion and stir with a wooden spoon.

Dice up 2-3 medium sized carrots and add to the onions, stirring quickly.

Add diced celery to the mixture.

Cook the onion, carrot, and celery over medium heat for about 3-4 minutes until the onion becomes transparent.

Turn the heat to high and add in the minced beef and pork, breaking it up in the pot.

Cook the meat until browned, ensuring the liquid at the bottom evaporates and it starts to fry again.

Season well with salt and pepper.

When the minced meat has browned, pour in about 1/2 cup of red wine to deglaze the pan, stirring well.

Turn the heat to low and add the tomato concentrate and about a teaspoon of oregano, mixing until combined.

Pour in 1 cup of canned tomatoes and 1 cup of water, stirring well.

Turn the heat to low, cover with a lid, and leave to cook for anywhere from 30 minutes to 8 hours, stirring occasionally.

If the sauce is too thin closer to serving, remove the lid and simmer on medium until it thickens.
