Originating from Bologna, Italy, Spaghetti Bolognese is a beloved dish that showcases the rich flavors of slow-cooked meat sauce. Traditionally served with tagliatelle, the dish has evolved globally, often paired with spaghetti in many countries. Its comforting nature makes it a family favorite, celebrated for its hearty ingredients and robust taste.

Fresh tomatoes add brightness, while crushed are often cheaper.
Heat a tablespoon of olive oil in an oven-proof pan over medium heat.
Crumble in the ground beef and Italian sausages, cooking slowly to allow browning, about 25 minutes, stirring occasionally.
Once browned, remove the meat from the pan and set aside.
Add another tablespoon of olive oil to the same pan and add diced pancetta, cooking until crispy, about 5 minutes.
Add chopped carrot, onion, and celery to the pancetta, cooking for about 10 minutes until soft and starting to brown.
Stir in bay leaves, fresh thyme, and dried oregano, followed by chopped garlic and dried porcini mushrooms.
Add tomato puree, sugar, and vinegar to the vegetable mixture, stirring to combine.
Pour in the four tins of tomatoes and add the browned meat back into the pan.
Add white wine and full fat milk, stirring everything together.
Cover the pan and transfer it to an oven preheated to 140°C (120°C fan) to cook for 2-3 hours, stirring occasionally if possible.
After cooking, remove from the oven and stir in fresh basil before serving.
