After 45 minutes, add the remaining half of the carrots and chopped smoked tofu, then cover and set another timer for 10 minutes.

After 1 hour and 10 minutes, add salt (starting with 1 teaspoon), pepper, 1/4 cup nutritional yeast, and 1 tablespoon maple syrup, stirring to combine.
