Cypriot Inspired Chicken Traybake

Originating from the Mediterranean island of Cyprus, this dish reflects the region's love for fresh ingredients and bold flavors. Traditionally enjoyed during family gatherings, the traybake embodies the communal spirit of sharing meals. Today, it has gained popularity beyond Cyprus, with variations appearing in many Mediterranean-inspired cuisines.

Preheat the oven to 200°C (400°F).
In a large bowl, add chicken thighs and drumsticks.
Chop potatoes and red onions into bite-sized pieces and add them to the bowl with the chicken.
Drizzle olive oil over the chicken and vegetables.
Add ground cinnamon, smoky Turkish pepper flakes, paprika, cumin, oregano, salt, and black pepper to the bowl and mix well.
In a separate bowl, combine tomato puree with chicken stock and stir.
Add chopped tomatoes to the mixture and pour it into the baking tray with the chicken and vegetables.
Fill the empty tomato can with water and add that to the tray as well.
Add fresh bay leaves and squeeze fresh lemons into the tray, then add the lemons to the dish.
Cover the tray with foil and place it in the oven for 35 minutes.
After 35 minutes, remove the foil to allow the chicken to caramelize.
Turn the chicken pieces over and return the tray to the oven uncovered for another 30 minutes.
After the second cooking period, turn the chicken skin side up and let it cook for an additional 30 minutes uncovered.
Once done, let the dish rest before serving.
