Macanese Egg Tarts

Margarine can reduce saturated fat, while vegetable oil is often less expensive.
Preheat the oven to 200°C (400°F).
Prepare the tart crust by mixing flour, butter, sugar, and salt until crumbly.
Add cold water gradually to form a dough, then chill for 30 minutes.
Roll out the dough and cut into circles to fit a muffin tin.
Press the dough circles into the muffin tin and prick the bottoms with a fork.
In a bowl, whisk together eggs, sugar, and vanilla extract until combined.
In a saucepan, heat milk and heavy cream over medium heat until just simmering.
Gradually pour the hot milk mixture into the egg mixture, whisking continuously.
Strain the mixture through a fine sieve to remove lumps.
Pour the filling into the prepared crusts, filling each about 3/4 full.
Bake in the preheated oven for 15-20 minutes until the tops are slightly caramelized.
Remove from the oven and let cool for a few minutes before serving.
