Apple Cinnamon Protein Muffins

1 cup Greek yogurt
1/2 cup applesauce
1/2 cup fresh diced apples

Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners or grease it.

In a large bowl, combine the whole wheat flour, protein powder, baking powder, baking soda, cinnamon, and salt.

In another bowl, mix together the Greek yogurt, applesauce, honey (or maple syrup), eggs, and vanilla extract until well combined.

Pour the wet ingredients into the dry ingredients and stir until just combined.

Fold in the fresh diced apples and walnuts (if using).

Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
