Wash the Roma and grape vine tomatoes.
Inspect the tomatoes for any marks or bad spots and cut them out if necessary.
Cut the tomatoes into smaller chunks.
Chop the onion into pieces, noting that it doesn't have to be perfect as it will melt in the sauce.
Grate or chop 2 cloves of garlic.
Add about 1/4 cup of olive oil to a pot and heat it up.
Add the chopped onion to the pot and let it soften for about a minute.
Add the grated garlic to the pot, being careful not to let it burn.
Add the chopped tomatoes to the pot along with salt (3 pinches), black pepper (a pinch), 1 teaspoon of basil, and a little oregano.
Mix the ingredients in the pot to incorporate the seasonings with the sauce.
Let the mixture come to a boil for about 10 minutes, then lower the heat to medium-low.
Cover the pot and let it simmer for 20 to 25 minutes.
After simmering, use a potato masher to mash the tomatoes and break them down, leaving some chunks for a rustic texture.
Taste the sauce to check if it needs more salt.
Once satisfied with the flavor, turn off the heat and cover the pot to let it cool slightly before processing.
Transfer the sauce to a food processor for a smoother consistency if desired.
