These cookies are typically enjoyed during the festive season, especially in January, and are often decorated with colorful icing and sprinkles. Today, Befanini are a beloved treat in Italian households, with variations found in different regions, reflecting local flavors and traditions.

Dried fruit provides sweetness without added sugars.
Blend the flour and cold butter in a food processor until you get a sandy mixture.
Transfer the mixture to a large bowl, add the powdered sugar and grated lemon zest.
Mix the ingredients with a spoon until combined.
Add the egg yolks and vanilla extract.
Mix again with a spoon until you get a workable dough.
Continue kneading the dough on a work surface with a handful of flour.
Form the dough into a ball, wrap it in plastic wrap, and let it rest in the fridge for at least 30 minutes.
Roll out the dough using flour and a rolling pin to a thickness of about half a centimeter (1/4 inch). Cut out cookies using your favorite cookie cutters.
Place the cookies on a baking sheet lined with parchment paper.
Brush the top of each cookie with egg white.
Decorate with colored sugar sprinkles.
Bake at 180°C (350°F) for about 15 minutes or until desired golden brown.
