Put flour in a bowl and make a well in it.

Crumble in the yeast and pour over lukewarm milk.

Using a wooden spoon, bring some of the flour into the milk to make a light dough.

Allow it to rise in one place for 30 minutes.

After 30 minutes, add the rest of the ingredients: sugar, egg yolk, salt, lemon zest, and butter.

Mix briefly and work out a smooth nonstick dough for about 10 minutes.

Bring the dough onto a floured wooden board and shape it into a loaf.

Leave to proof for 60 minutes.

Meanwhile, make a crumble with equal parts of flour, sugar, and butter by incorporating all the ingredients together until crumbly.

Roll out the dough into a thin round shape about 30 centimeters in diameter.

Transfer it onto a baking tray and make an edge using your hands.

Spread a thick layer of pears on top and heavily sprinkle with crumble.

Egg wash the rim and leave to rest for 20 minutes.

Put in the oven at 160°C for 20 to 30 minutes.

While the pie is baking, melt some butter in a pan and pour in the rum.

Take out the pie from the oven and generously brush with rum butter immediately.

Allow it to cool.
