Egg Custard

2 cups plus 2 Tbsp. Milk (500 mL)
1/2 cup white granulated sugar (115 g)
1 tsp of vanilla extract (5 mL)
3 egg yolks
3 tsp. cornstarch (15 g)

In a large pot, add the milk and sugar, and heat on medium until the sugar dissolves.

In a separate bowl, mix the egg yolks and cornstarch to form a paste.

Slowly add some of the warm milk mixture to the egg yolk mixture while stirring to temper the eggs.

Pour the egg mixture back into the pot with the remaining milk mixture.

Stir the mixture on medium heat until it begins to bubble and thicken, about 5 to 8 minutes.

Transfer the custard to bowls and serve warm or cold.
