Variations exist globally, with similar tarts found in Portuguese and Chinese cuisines, each adding their own twist to this classic.

Coconut oil provides a dairy-free option.
Preheat oven to 200 degrees Celsius (390 degrees Fahrenheit).
Coat a 12-cup muffin tin with oil.
Ensure filo pastry is defrosted and ready to use.
Fold the filo pastry over and make a small nick to mark halfway, then cut down the center.
Cut the filo pastry in half again to create smaller rectangles.
Place the filo pastry rectangles into the muffin tin, pressing them to form rustic cups that come up the sides.
In a mixing bowl, combine the whole egg, egg yolks, castor sugar, creme fraiche, vanilla bean paste, cinnamon, and nutmeg. Whisk until smooth.
Evenly pour the mixture into the filo pastry cups, filling them partially first.
Bake in the oven for about 10 minutes or until the pastry starts to blister.
Remove from the oven and drizzle half of the golden syrup over the tarts.
Return the tarts to the oven for an additional 2 minutes.
Transfer the tarts to a cake stand or allow to cool on a wire rack.
Place the tarts in the fridge to cool completely before serving.
