Baked Egg Custard

2 cups milk
4 large eggs
1/2 cup granulated sugar
1 tsp vanilla extract
1/4 tsp salt
1/2 tsp ground nutmeg (optional)

Preheat your oven to 325°F (160°C).

In a medium saucepan, heat the milk over medium heat until it is warm but not boiling.

In a mixing bowl, whisk together the eggs, sugar, vanilla extract, and salt until well combined.

Slowly pour the warm milk into the egg mixture while whisking continuously to temper the eggs.

Strain the mixture through a fine-mesh sieve into a large measuring cup or bowl to remove any lumps.

Pour the custard mixture into individual ramekins or a baking dish.

Sprinkle a little ground nutmeg on top of each custard if desired.

Place the ramekins or baking dish in a larger baking pan and fill the pan with hot water until it reaches halfway up the sides of the ramekins.

Bake in the preheated oven for 30-40 minutes, or until the custard is set but still slightly jiggly in the center.

Remove from the oven and let cool slightly before serving. Enjoy warm or chilled.
