In a bowl, combine 5 tablespoons of room temperature butter with 1 cup of flour and 1/4 cup of sugar.
Add 2 tablespoons of water and 1 tablespoon of sugar syrup or corn syrup.
Knead the dough until it is sticky and soft.
Cover the dough and refrigerate for 5-10 minutes.
Roll the dough into a cylinder and cut it into small pieces.
Roll each piece into balls about 1 inch in diameter.
Mix 2/3 cup of roasted sesame with 1/4 tablespoon of sugar and 1/2 tablespoon of sugar syrup or corn syrup.
Press each dough ball into the chopped pistachio, then flip and press the other side into the sesame mixture.
Flatten the dough to expand it to about 2 inches in diameter.
Place the cookies on a baking sheet without spacing them apart as they will not expand during baking.
Bake in a preheated oven at 320°F (160°C) until golden brown.
