1

Activate the yeast by mixing 2 and 1/4 teaspoons of active dry yeast with 100 grams of granulated sugar, reserving 1 tablespoon of sugar, and warm milk (415 ml) in a small bowl for about 10 minutes until bubbly.

2

In a large mixing bowl, combine 660 grams of all-purpose flour, the remaining sugar, and 3 grams of salt, making a well in the center.

3

Add 1 large egg to 60 ml of the warm milk and stir, then pour into the well of the flour mixture along with the activated yeast.

4

Stir until a dough forms and knead lightly for about 1-2 minutes until smooth but tacky.

5

Cover the dough with plastic wrap or a towel and let it rise in a warm area for about 45 minutes until nearly doubled in size.

6

Prepare the blueberry filling by patting dry 340 grams of blueberries and mixing them with 50 grams of sugar, then set aside.

7

Deflate the risen dough and divide it into 18 equal pieces, rolling each into a smooth ball.

8

Flatten each dough ball to about 4.5 to 5 inches in diameter, then place a few blueberries in the center and pinch the dough closed around them.

9

Shape the dumplings into balls and place them seam side down on a greased baking dish, covering them to keep them from drying out.

10

Let the dumplings rise for another 30 minutes before baking.
