1

Slice 14 ounces of tofu into half-inch slices.

2

Lay the tofu on a kitchen towel and cover with four layers of paper towels.

3

Place a cookie sheet over the tofu and put two iron skillets on top to press out moisture.

4

Leave the tofu to press for 20 minutes while walking the dog.

5

After 20 minutes, remove the tofu and check that the paper towels are soaking wet.

6

Cut the pressed tofu into strips instead of cubes to prevent breaking during cooking.

7

In a bowl, pour 1/4 cup of the stir-fry sauce over the tofu and gently mix with a rubber spatula.

8

Place the tofu on a silicone mat on a baking pan and drizzle with olive oil to prevent sticking.

9

Preheat the oven to broil and broil the tofu for 4 minutes on one side, then flip and broil for an additional 2 minutes.

10

In a hot skillet, add 2 cups of asparagus and pour in 1/4 cup of the stir-fry sauce, stir-frying until cooked.

11

Add 2 cups of shredded carrots to the skillet and stir-fry, adding more stir-fry sauce as needed.

12

Once the vegetables are cooked, add the broiled tofu to the skillet and mix gently.

13

Serve the stir-fry over cooked grains, keeping the grains separate from the stir-fry.
