1/2 teaspoon cumin
1/2 teaspoon chili powder

2 boxes Jiffy cornbread mix
2/3 cup milk
2 eggs
1 cup frozen corn
1 can Rotel diced tomatoes and green chilies (mild)
1 can pinto beans (drained and rinsed)
1 cup cheddar cheese

Add 1 pound of ground beef to a large skillet and cook until browned.

Add taco seasoning: 1/2 teaspoon each of garlic powder, onion powder, paprika, cumin, and chili powder, along with a couple pinches of salt and black pepper.

While the ground beef is cooking, mix 2 boxes of Jiffy cornbread mix in a large bowl.

Add 2/3 cup of milk and 2 eggs to the cornbread mix and stir until combined.

Once the ground beef is cooked, turn off the heat and add 1 cup of frozen corn, 1 can of Rotel diced tomatoes and green chilies, and 1 can of drained and rinsed pinto beans. Stir to combine.

Add the cornbread mixture to the skillet with the beef and stir everything together.

Lightly spray a 9 by 13 baking dish with non-stick spray and pour the mixture into the dish.

Sprinkle 1 cup of cheddar cheese on top of the mixture.

Cover the dish with aluminum foil and bake in a 400 degree oven for about 45 minutes.
