Heat olive oil in a large pot over medium heat until shimmering.

Add chopped onions and sauté until translucent, about 5 minutes.

Stir in minced garlic and cook until fragrant, about 1 minute.

Add diced bell peppers and carrots, cooking for another 5 minutes.

Sprinkle in paprika and caraway seeds, stirring to coat the vegetables.

Add diced potatoes and stir to combine with the vegetable mixture.

Pour in vegetable broth and add tomato paste, stirring well.

Add bay leaves, salt, and black pepper to taste.

Bring the mixture to a boil, then reduce heat to low.

Cover and simmer for 30-40 minutes, until potatoes are tender.

Remove bay leaves and adjust seasoning if necessary.

Garnish with chopped parsley before serving.
