Shrimp Taco Salad

1.5 pounds shrimp
3 quarts boiling water
salt
fresh pico de gallo
guacamole
mixed greens
shaved red onion
iceberg lettuce
blue corn tortilla chips

Boil 3 quarts of salted water.

Add 1.5 pounds of shrimp to the boiling water and cook for 1 minute.

Turn off the heat and let the shrimp sit for another 4 minutes.

Peel the shrimp, removing the shell and vein.

Slice the shrimp into third size pieces and marinate in fresh pico de gallo.

Spread guacamole on the bottom of the plate.

Add mixed greens, shaved red onion, and iceberg lettuce to the plate.

Crumble blue corn tortilla chips on top.
