Drizzle a little more olive oil on top of the bread.

Press down on the sandwich with something heavy to flatten it.

Leave the weight on top and cook for about three to five minutes until the first side is golden brown.

Check the sandwich for doneness and flip it over.

Press down on the weight again and cook for another three to five minutes until the second side is golden brown and the cheese is melted.
