It reflects the resourcefulness of American cuisine, transforming humble ingredients into a satisfying meal. Today, variations abound, with people adding different toppings and sauces to personalize their paninis.

Combine 3/4 cups of mayonnaise with 2 and 1/2 heaping tablespoons of basil pesto in a bowl.
If a more subtle pesto flavor is preferred, reduce the pesto to about 1 and 1/2 teaspoons.
Cover the mixture and keep it refrigerated.
Cut a loaf of ciabatta bread into quarters using a serrated blade.
Base each piece of bread with olive oil to prevent dryness.
Spread one tablespoon of the pesto mayo on each piece of bread.
Use two slices of Swiss cheese per sandwich, splitting them in half.
Place the Midamar halal bologna on the sandwich, folding it in half and shingling it for a photogenic look.
Add spinach to the sandwich, seasoning with salt and pepper if desired.
Top the sandwich with the other piece of bread and base it with olive oil.
Flip the sandwich and base the bottom side with olive oil.
Move the sandwich to a pan on low heat, oil side down.
Base the top piece of bread with more olive oil.
Press the sandwich down with a large spatula for about a minute to flatten it.
Move the sandwich to the side of the pan and add about a tablespoon of water, covering it with a lid to let it vent.
Once the water evaporates, remove the lid and press down with spatulas for about 30 seconds.
Flip the sandwiches, add another tablespoon of water, and cover with the lid until that evaporates.
After the cheese is melted and the center is heated through, flip the sandwich one last time and press firmly for about 15 to 20 seconds per sandwich.
Remove the sandwich from the heat and serve with chips and tomato soup.
