Preheat a grill or improvised press (like an iron wrapped in aluminum foil) over medium heat.
Slice the ciabatta bread horizontally.
Spread pesto evenly on the inside of both bread halves.
Layer mozzarella cheese, tomato slices, and spinach on one half of the bread.
Season with salt and pepper to taste.
Close the sandwich with the other half of the bread.
Brush the outside of the sandwich with olive oil.
Place the sandwich in the preheated grill or press.
Cook until the bread is golden brown and the cheese is melted, about 3-5 minutes.
Remove the sandwich from the grill or press and let it cool for a minute.
Drizzle with balsamic vinegar before slicing and serving.
