Instructions
- 1Preheat a grill pan over medium heat.
- 2Clean and slice the mushrooms.
- 3Heat olive oil in the pan and add minced garlic; sauté until fragrant, about 1 minute.
- 4Add sliced mushrooms to the pan; cook until browned and tender, about 5-7 minutes.
- 5Season mushrooms with salt and black pepper to taste; remove from heat.
- 6Slice ciabatta bread in half horizontally.
- 7Layer mozzarella cheese on the bottom half of the ciabatta.
- 8Top with sautéed mushrooms and fresh basil leaves.
- 9Drizzle balsamic vinegar over the mushrooms.
- 10Close the sandwich with the top half of the ciabatta.
- 11Brush the outside of the sandwich with olive oil.
- 12Place the sandwich on the grill pan; press down with a spatula.
- 13Grill for 3-4 minutes until golden brown and cheese is melted.
- 14Flip the sandwich carefully and grill the other side for another 3-4 minutes.
- 15Remove from the grill, slice in half, and serve warm.

Instructions

- 3In the same pot, add the cauliflower florets and cook in boiling water for about 5 minutes until tender. Drain and set aside.
- 4In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant.
- 5Add the cooked cauliflower to the skillet, seasoning with salt and black pepper. Sauté for another 2-3 minutes.
- 6Add the cooked penne pasta to the skillet, tossing everything together to combine well.
- 7If using, sprinkle the grated Parmesan cheese over the pasta and cauliflower, stirring until melted and evenly distributed.
- 8Remove from heat and garnish with fresh parsley before serving.
