Applesauce reduces fat while keeping it moist.
In one bowl, combine flour, baking powder, baking soda, cinnamon, ginger, and nutmeg. Mix well and set aside.
In another bowl, beat together softened butter and brown sugar until creamy.
Add two eggs to the butter and sugar mixture and beat well.
Increase speed to medium high and beat for one minute.
Add flour and ketchup to the butter mixture and beat on low, scraping the sides of the bowl as needed.
Beat on high for one minute until well incorporated.
Divide the batter between two prepared cake pans.
Bake at 350°F for about 30 minutes or until a toothpick comes out clean.
Let the cakes cool for about 15 minutes before inverting onto a rack to cool completely.
Make the frosting by combining room temperature cream cheese, room temperature butter, and vanilla in a bowl and beat until smooth.
Gradually add powdered sugar and beat on high for two minutes until light and fluffy.
Place one cooled cake on a dish, frost the top with a third of the frosting, add the second layer, and frost the top and sides with the remaining frosting.
