Combine egg yolks and white sugar, mixing until creamy.
Add butter, lemon zest, lemon juice, vanilla sugar, sour cream, and baking powder to the egg mixture; mix until well combined.
Gradually add all-purpose flour one cup at a time until a dough forms.
Wrap the dough in saran wrap and chill in the fridge for 30 minutes.
Separate the dough into three balls, keeping two in the fridge and working with one.
Dust the surface with flour and roll out the dough to about 1/4 inch thickness using a dinner plate for size.
Cut the dough into a circle using a pizza cutter.
Spread patita filling on the triangles, rolling from the wide end.
For plum jam, pinch the sides and roll from the wide end.
For hazelnut chocolate spread, repeat the same process as with the plum jam.
Place the rolls on a baking tray lined with parchment paper and bake in a 350°F oven for 15-20 minutes until light golden.
Transfer to a wire rack to cool and dust with icing sugar before serving.
