Boil the yam until very soft, adding a little salt.
Prepare the sauce by melting 1 tablespoon of butter in a pan.
Add minced garlic to the melted butter and fry for 2 minutes.
Add minced onion and fry until translucent, about 2 minutes.
Stir in minced scotch bonnet pepper and mix well.
Add flax mackerel fish and stir to combine, then set aside to cool.
Once the yam is cooked, drain the water and let it cool slightly before mashing.
Mash the yam until desired smoothness, leaving some lumps.
Gradually add evaporated milk to the mashed yam until creamy but not soggy.
Combine the yam mixture with the sautéed onion, garlic, and pepper mixture until well mixed.
Spray vegetable oil on hands and roll the yam mixture into balls.
Coat each ball in egg, then roll in bread crumbs.
Deep fry the yam balls in preheated vegetable oil until golden brown.
