Start with 360 mls of water in a saucepan.

Add 4 g of kosher salt, 14 g of sugar, and half a teaspoon of vanilla essence.

Add 168 g of unsalted butter that's been diced.

Melt the butter and bring everything to a boil for about a minute, then turn it off.

Add 260 g of all-purpose flour to the mixture and work it into a dough by hand.

Heat the dough on medium to low heat until it reaches above 80°C, then set aside to cool for a few minutes.

Prepare a piping nozzle (rounded star tip) and place it in a piping bag.

Once the dough has cooled to about 63-64°C, add one egg and mix until absorbed, then add the second egg and mix until smooth without lumps.

Pipe the dough onto a tray lined with greaseproof paper, making churros about 6-8 inches long, and freeze for 30-40 minutes.

Mix 1 cup of sugar with ground cinnamon to make cinnamon sugar and set aside.

Melt 150-200 g of baking chocolate in the microwave in 30-second intervals, adding milk as needed until it reaches a good sauce consistency.

Add a splash of vanilla essence and a little salt to the chocolate sauce, and mix well.

Once the churros are frozen, heat about 2 inches of neutral oil (canola) in a Dutch oven to 350°F.

Fry the churros in batches of about five for about 4 minutes until golden brown, gently separating them if they stick together.

Remove the churros and drain them, then roll them in the cinnamon sugar while still hot.

Plate the churros and serve with the chocolate sauce on the side.
