Sorrel Punch

2 cups fresh sorrel leaves, washed and chopped
4 cups water
1 cup sugar
1/2 cup lime juice
1/4 cup ginger, grated
1 tsp vanilla extract
Ice cubes
Mint leaves for garnish

In a large pot, bring 4 cups of water to a boil.

Add the chopped sorrel leaves to the boiling water and let it simmer for about 10 minutes.

Remove the pot from heat and strain the liquid into a large bowl, discarding the solids.

While the liquid is still warm, stir in the sugar until fully dissolved.

Add the grated ginger and vanilla extract to the mixture, stirring well.

Let the mixture cool to room temperature, then stir in the lime juice.
