Instructions
- 1In a large bowl, combine the flour, granulated sugar, and salt.
- 2Add the chilled butter to the flour mixture and mix until it resembles coarse crumbs.
- 3Gradually add ice water, mixing until the dough comes together. Form into a disk, wrap in plastic, and refrigerate for at least 1 hour.
- 4Preheat the oven to 375°F (190°C).
- 5In another bowl, combine the sliced plums, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Toss to coat the plums evenly.
- 6On a floured surface, roll out the dough into a large circle about 1/8 inch thick.
- 7Transfer the dough to a parchment-lined baking sheet. Spoon the plum mixture into the center, leaving a 2-inch border.
- 8Fold the edges of the dough over the plums, pleating as necessary to create a rustic look.
- 9Brush the edges of the dough with the beaten egg for a golden finish.
- 10Bake for 35-40 minutes, or until the crust is golden and the plums are bubbly.
- 11Allow to cool slightly before serving.
