Peel and shred the carrot and cucumber.
Mince or thinly slice the green chili, ginger, and garlic.
Cut the lemon in half.
Put all of the vegetables except the lemon into a bowl and add salt and pepper.
Mix the whole thing well.
Boil some water and then add in the vegetable mixture after a few minutes.
Add in lemon juice after about 5 minutes.
After a minute or so, add in sugar and let it boil for 5 more minutes.
Add in the juice of the other half of the lemon and mix the whole thing well.
Add in your cornstarch or slurry to thicken the sauce.
Cook until preferred thickness.
Serve.
