Heat olive oil in a large pot over medium heat until shimmering.

Add chopped onion, garlic, and ginger; sauté until fragrant, about 2-3 minutes.

Add diced chicken and cook until browned, about 5-7 minutes.

Stir in chopped bell pepper, carrots, and peas; cook for another 3-4 minutes.

Add rice to the pot and stir to combine with the vegetables and chicken.

Pour in coconut milk and soy sauce; bring to a simmer.

Reduce heat to low, cover, and cook for 15-20 minutes until rice is tender.

Remove from heat and let sit, covered, for 5 minutes.

Fluff rice with a fork and stir in lime juice and chopped cilantro.

Season with salt and black pepper to taste.

Serve warm, garnished with additional cilantro if desired.
