Veal with Lemon Sauce

Veal with Lemon Sauce, known as Veal Lemonato, is a cherished dish in Greek cuisine, often served during family gatherings and festive occasions. The combination of tender veal and zesty lemon sauce highlights the Mediterranean love for fresh, vibrant flavors. Today, this dish has found its way into various international menus, showcasing the adaptability of Greek culinary traditions.

White grape juice adds sweetness without alcohol.
chicken broth
๐ฅHealthier: vegetable broth
๐ฐCheaper: water with seasoning
Vegetable broth is lower in calories and can be homemade.
Cut the veal meat into smaller pieces.
Add the meat to a pot with 1 litre of water.
Cook over low heat for 15 minutes.
Strain the meat and rinse it with hot water.
Heat 30 ml of olive oil in a pot.
Saute the onion for 3 minutes.
Add the meat back to the pot.
Add 2 cloves of garlic, 1 litre of hot water, 2-3 carrots, and 1/2 tsp oregano.
Cover and simmer for about 1 hour, or until the meat becomes tender.
Add chopped parsley, salt, and black pepper, and simmer for 5 minutes.
Add the juice from 1-2 lemons and mix.
Add 1 tbsp of cornstarch and simmer for 3 minutes.
