Today, lechona is enjoyed across Colombia and has become a beloved dish at family gatherings and national holidays, with variations in preparation and stuffing ingredients.

Start with a whole pig skin that includes ears and snout, preferably without excess fat.
Prepare 33 pounds of pork meat, seasoned with garlic, black pepper, and curry.
Cook a mixture of onions in vegetable oil, adding spices, garlic, black pepper, thyme, oregano, and bay leaves until it is greasy.
Measure the pig skin to be at least 100 centimeters long, ideally 110 centimeters for a proper size.
Generously season the inside of the pig skin with salt and black pepper.
Mix the pre-cooked rice with green peas and the prepared meat mixture.
Fill the pig skin with the rice and meat mixture, layering it with two to three layers of meat and rice.
Sew the pig skin shut securely to prevent the filling from escaping during cooking.
Transfer the pig to a roasting tray and cover the ears with aluminum foil to prevent burning.
Add some pork fat on top for flavor.
Preheat the oven to a moderate temperature before placing the pig inside.
Roast the pig for approximately 9 hours, checking the temperature to ensure it is cooked through.
After 9 hours, remove the pig from the oven, ensuring the skin is crispy and golden.
