2 cans Fortune Chile Abalone
2 cans Fortune Razor Clams
2 tbsp cooking oil
1 stalk leek
1 onion
1 knob ginger
3 cloves garlic
1 carrot
2 stalks celery
3 tbsp Shaoxing Wine
2 litres water
3 tbsp Fortune Abalone sauce
2 tbsp fish sauce
salt (to taste)
1 tbsp sugar
200g shimeji mushrooms
200g daikon
100g dried scallops
300g cooked rice
garnish: fried rice puffs, fried egg, chopped scallions, coriander

In a pot add cooking oil. Add in leeks, onion, garlic, carrot and celery. Stir fry until fragrant.

Deglaze with Shaoxing wine. Add in 2 cans of abalone brine, 2 litres of water. Add abalone sauce, fish sauce, salt and sugar.

Mix well and cook for about 30 minutes. Strain into another pot, and add in daikon, mushrooms, dried scallops. Bring to boil and cook for another 20 minutes.

In a claypot, add cooked rice, razor clams, sliced abalone and soup with mushrooms and daikon.

Garnish with fried rice puffs, fried egg, scallions and coriander.
