Ingredients

  • 12 large jalapeño peppers
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled bacon
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp black pepper
  • 1/4 tsp salt
  • 1/4 cup chopped fresh cilantro (optional)

Instructions

  1. 1Preheat your oven to 375°F (190°C).
  2. 2Cut the jalapeño peppers in half lengthwise and remove the seeds and membranes for less heat.
  3. 3In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, crumbled bacon, garlic powder, onion powder, black pepper, and salt. Mix until well combined.
  4. 4If using, fold in the chopped cilantro into the cheese mixture.
  5. 5Using a spoon, fill each jalapeño half with the cheese mixture, packing it in well.
  6. 6Place the stuffed jalapeños on a baking sheet lined with parchment paper.
  7. 7Bake in the preheated oven for 20-25 minutes, or until the jalapeños are tender and the cheese is bubbly and slightly golden.
  8. 8Remove from the oven and let cool for a few minutes before serving.
  9. 9Serve warm as an appetizer or snack.

  • 1 cup beef broth
  • 1 medium onion, chopped
  • 1 bell pepper, chopped
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. 1In a large pot, brown the ground beef over medium heat until fully cooked. Drain excess fat.
  2. 2Add the chopped onion and bell pepper to the pot and sauté until softened, about 5 minutes.
  3. 3Stir in the garlic powder, cumin, salt, and black pepper, cooking for an additional minute.
  4. 4Add the kidney beans, black beans, corn, diced tomatoes, and beef broth to the pot.
  5. 5Sprinkle the chili seasoning over the mixture and stir well to combine.
  6. 6Bring the chili to a boil, then reduce heat to low and let simmer for 30 minutes, stirring occasionally.
  7. 7Taste and adjust seasoning if necessary, adding more salt or chili seasoning as desired.
  8. 8Serve hot, garnished with your choice of toppings such as cheese, sour cream, or green onions.
