Melt 4 tablespoons of margarine and set aside.
In a mixing bowl, add 2.5 cups of lukewarm milk (about 110 °F).
Add 3/4 cup of sugar and 1 tablespoon of yeast to the milk and stir. Let it sit for about 5 minutes until bubbly.
Add salt, melted margarine, and light olive oil to the mixture.
Gradually add 7 cups of flour in small portions, mixing with a whisk and then using a KitchenAid mixer to knead until the dough is elastic and not sticky.
Oil a baking sheet using a paper towel to spread the oil evenly.
Flour the surface lightly and take a third or fourth of the dough to roll it out into a long string, making it thin for more layers.
Brush the rolled-out dough with egg wash.
Generously apply the poppy seed filling over the dough.
Roll the dough tightly starting from the end closest to you, stretching it slightly for even thickness.
Slice the rolled dough into halves and then cut each half into three pieces to form rolls.
Place the rolls on the oiled baking sheet, leaving space for them to rise.
Bake in the oven for about 30 to 40 minutes until golden brown.
