Cut the little roots off the end of the scallion and dice the bottom white part.

Save the top green shoots for later.

Slice the tofu into small squares.

Heat sesame oil in a pot and add garlic, scallions, and tofu. Sauté for about 2 minutes until the garlic starts to turn golden.

Push all the ingredients to the side and add an egg. Let it cook for a minute and then scramble it up.

Mix everything together and then add in the raw shrimp.

After about 2 minutes, when the edges of the shrimp start to turn pink, mix everything up.

Add soy sauce, fish sauce, sesame oil, and coconut sugar. Stir together.

Add in the rice noodles and water, cover with a lid, and put the flame on high.

After 2 minutes, when the noodles start to soften, gently push them down into the water.

When the water boils, open the lid and stir again. The noodles should be soft enough to mix everything together.

Repeat this process until all of the water has been absorbed.

While waiting for the noodles, chop the peanuts, cut the lime, dice the scallion, and chop the cilantro.

Once all the liquid has been absorbed, give it a final stir and then plate the dish.
