In a bowl, mix 3 cups of all-purpose flour, 1/4 cup of sugar, 1 1/2 teaspoons of salt, 1 tablespoon of baking powder, and 1 1/2 teaspoons of baking soda.
In another bowl, whisk together 3 eggs until the yolks are even, then add 2 1/4 cups of milk, 1/4 cup of vegetable oil, 1/4 cup of apple cider vinegar, and some vanilla extract.
Combine the wet ingredients with the dry ingredients using a spatula, gently folding until just mixed; lumps are okay.
Let the batter rest for at least 10 minutes to allow the baking powder and baking soda to activate.
Cook thick cut bacon on medium low heat until it renders its fat, then remove the bacon and scrape away any burnt bits from the pan.
Using a ladle, pour the pancake batter onto the pan, making pancakes as big or small as desired.
Cook the pancakes until tiny bubbles form around the edges, then flip them to cook the other side until golden brown.
Serve the pancakes warm with maple syrup.
