Add diced onion and minced garlic; sauté until translucent, about 2-3 minutes.
Add frozen creamed spinach to the saucepan; cover and let thaw, stirring occasionally.
Once spinach is thawed, add cut salmon cubes and gently fold into the spinach.
Season with salt, pepper, and nutmeg; stir carefully.
Pour in vegetable broth and cream; mix well and press the pasta into the liquid, adding enough liquid to cover the noodles.
Let simmer for about 15-20 minutes, stirring occasionally.
Cook initially without a lid for 5 minutes, then cover for the remaining time.
Taste and adjust seasoning as needed, adding more salt and nutmeg if desired.
Serve topped with parmesan cheese if desired.
