Add flour to a mixing bowl.
Crack in 2 eggs and mix.
Add a teensy bit of salt.
Pour in milk until about a third of the container is left.
Add seltzer water for fluffiness, if desired.
Blend the mixture until smooth, checking consistency with a ladle.
Heat a non-stick pancake crepe pan on high, then reduce to medium.
Add a little oil to the pan to prevent sticking, if necessary.
Pour about half a ladle of batter into the pan and cook until bubbles form, about 15-30 seconds.
Flip the pancake using a knife or spatula when ready.
Cook the other side until done.
