Sift 1 cup of all-purpose flour into a bowl.
Crack 3 large eggs into the bowl.
Add 1 cup of milk and 3/4 cup of mineral carbonated water to the mixture.
Add a pinch of salt.
Whisk everything together until smooth, either by hand or using a hand mixer or blender.
Let the batter rest at room temperature for 20 to 30 minutes.
Brush a little sunflower oil into the pan.
Pour 1/3 cup of batter into the pan and swirl to spread it evenly.
Cook on low to medium heat until the crepe starts pulling away from the sides of the pan, then flip it.
Transfer the cooked crepe to a plate and repeat with the remaining batter.
Serve with powdered sugar and a drizzle of honey, or roll it up and slice it to use in beef broth.
