Baked Sweet Potatoes

4 medium sweet potatoes
1 can (15 oz) kidney beans
1 lb extra lean ground turkey
1 cup quinoa
4 slices bacon
1 can (15 oz) chickpeas
1 tsp salt
1/2 tsp black pepper
1/4 cup homemade tomato paste
1 medium onion
1 green bell pepper
3 cloves garlic
2 cups spinach
1/2 tsp onion powder
1 tsp paprika
1/2 tsp fennel seeds
1 tsp cumin powder
1 tsp oregano
1 tsp chili powder
1 tsp chicken bouillon seasoning
2 tbsp avocado oil
2 mini avocados
1 lime
1 mini bell pepper
1 tbsp dried parsley
1 tsp Italian seasoning
2 tbsp unsalted butter

Scrub the sweet potatoes clean since they will be baked with the skin.

Spray the sweet potatoes with avocado oil and massage it in.

Sprinkle salt on the sweet potatoes and massage it in to prevent drying out during baking.

Place the sweet potatoes in the air fryer to bake.

Prepare the chili stuffing by cooking the bacon until crispy and golden brown, then transfer it to a plate.

In the same oil, sauté chopped onion and green bell peppers until softened.

Add the cooked kidney beans to the sautéed vegetables.

Mix in homemade tomato paste, garlic, and the spice blend (onion powder, paprika, fennel seeds, cumin powder, oregano, chili powder, chicken bouillon seasoning) and let simmer.

While the chili simmers, prepare the avocado salsa by mashing two mini avocados and mixing in lime juice, chopped mini bell pepper, ground cumin, salt, and pepper.

For the second stuffing, sauté leftover onion and garlic from the chili, then add cooked quinoa and chickpeas.

Season the quinoa and chickpea mixture with dried parsley, Italian seasoning, salt, pepper, and paprika.

Stuff the baked sweet potatoes with the chili and avocado salsa, the quinoa and chickpeas, or simply with melted unsalted butter.
