Preheat the oven to 400°F (200°C).
Select 4 uniformly sized sweet potatoes, focusing on their girth.
Poke the sweet potatoes with a knife to prevent them from exploding.
Drizzle olive oil over the sweet potatoes and massage it into the skin.
Place the sweet potatoes on a baking sheet and roast in the oven for about 35 minutes or until completely tender.
While the sweet potatoes are roasting, cook sliced bacon in a pan over medium heat until it starts to crisp up.
Add sliced green onions and diced jalapeno to the pan with the bacon and stir for one minute, then turn off the heat and reserve the mixture.
Once the sweet potatoes are tender, remove them from the oven and let them cool slightly.
Cut off the top third of each sweet potato at a 45-degree angle and remove the tops.
Scoop out the flesh of the sweet potatoes into a bowl, leaving about a quarter inch of flesh in the skins for structure.
Season the sweet potato flesh with kosher salt, black pepper, cayenne pepper, sharp white cheddar, creme fraiche (or sour cream or regular cream), and the juice of half a lime.
Mash the sweet potato mixture until smooth, then add the reserved bacon, green onion, and jalapeno mixture using a slotted spoon and mix well.
Stuff the sweet potato skins with the filling, mounding slightly on top.
Sprinkle a little extra cheese over the top of the stuffed sweet potatoes.
Return the stuffed sweet potatoes to the oven and bake for an additional 20 to 25 minutes until heated through and the tops are browned.
