Twice Baked Sweet Potato Recipe | Vegan | The Vegan Zombie

Preheat the oven to 450°F.

Bake 3 sweet potatoes for about 40 minutes until soft, poking holes in them and wrapping in tinfoil.

Cut each sweet potato in half lengthwise, saving the skin.

Scoop out the sweet potato flesh, leaving about a 1-inch border around the skin.

Place the scooped sweet potato flesh in a bowl and set the skins aside on a baking sheet.

In a pan, heat olive oil over low heat and fry the smart bacon until crispy, then set aside on a paper towel to cool.

Using a pastry cutter or potato masher, mash the sweet potato flesh until smooth.

Add half of the soy milk (about 1/4 cup), 2 tablespoons of vegan butter, sage, onion powder, and some vegan cheese to the mashed sweet potato and mix until combined.

Add vegan Parmesan cheese and 1 teaspoon of salt, mixing well and tasting for seasoning.

Fill the sweet potato skins with the mashed filling, mounding it up slightly.

Crumble the crispy bacon and sprinkle it on top of the filled sweet potatoes, along with some vegan cheese and cracked pepper.

Preheat the oven to 350°F and bake the stuffed sweet potatoes for about 20 minutes.

Remove from the oven and serve.
