Twice Baked Sweet Potatoes

4 medium sweet potatoes
2 tablespoons Crisco
1/2 cup cream cheese
1 teaspoon vanilla extract
1/4 cup brown sugar
1 teaspoon cinnamon
1/4 cup pecans, chopped
2 tablespoons butter

Poke a few holes in the sweet potatoes.

Lather the sweet potatoes with Crisco.

Place the sweet potatoes on a baking sheet.

Put the baking sheet in a preheated 400° oven for about 45 minutes until tender.

Slice the sweet potatoes lengthwise and let them cool slightly.

Spoon out the filling into a bowl, leaving about a quarter of an inch around the edges.

Mash the filling until creamy, leaving a few chunks if desired.

Add cream cheese, vanilla, and brown sugar to the filling and stir until combined.

Add a few pinches of cinnamon and optionally nutmeg or clove.

Spoon the mixture back into the sweet potato shells and smooth it out.
