In a pressure cooker place the steak, 1 spring Thyme, two cloves of garlic, and 3 Bay leaves.

Cover the steak with water and season with salt and pepper.

Bring to a boil and cook on low for 15 minutes.

Remove the meat and set the liquid aside.

Pull the meat apart into strings.

In a frying pan sauté the onion, the garlic, 2 springs thyme, and 3 bay leaves with the olive oil.

Add the stringed meat and the cinnamon.

Season with salt & pepper.

In a sauce pan cook down the tomato, the bell pepper, and onion.

Once cooked, blend well in a blender.

Strain the sauce and add it to the string meat.

Cook the vegetables in reserved liquid from the meat.

When the vegetables are done, remove them from the liquid.

Add the vegetables to the meat and sauce. If the sauce is too thick you can add some of the reserved liquid to thin it.

Check to see if it needs any salt & pepper.

Serve over rice and corn tortillas.
