French Onion Tofu

Originating from France, French Onion Soup is a classic dish known for its rich, savory flavors and caramelized onions. The tradition of using onions dates back to ancient times, and this tofu variation offers a plant-based twist, making it accessible for vegetarians and vegans. Today, it is celebrated in various forms around the world, with adaptations that cater to different dietary preferences.

Nutritional yeast adds a cheesy flavor with fewer calories.

Olive oil is healthier and can be used for sautéing.
Slice the onions and heat a pan over medium-high heat.
Add 1-2 tablespoons of olive oil and the sliced onions to the pan.
Cook the onions over low heat for about 10 minutes until they start to take on color and become sticky.
Add 1 tablespoon of olive oil, 2 cloves of minced garlic, and 0.5 teaspoons of oregano to the onions and sauté.
Add 1 tablespoon of soy sauce and reduce until dry.
Stir in 1 teaspoon of Dijon mustard and then add 1 cup of vegetable stock, allowing to cook slowly until slightly reduced.
Press the tofu for about 30 minutes to remove moisture.
Mix 1 teaspoon of extra virgin olive oil, black vinegar, smoked paprika, and a pinch of salt for basting.
Cut the tofu in half to create four portions and place them on a baking sheet lined with parchment paper.
Bake the tofu at 425°F for 20-25 minutes, flipping halfway through and basting with the mixture.
Once the tofu is cooked, top with caramelized onions and a generous amount of vegan cheese.
Bake again for 10-12 minutes until the cheese is melted and slightly browned.
