Drumsticks are often cheaper and still flavorful.

Marinate chicken thighs in a mixture of olive oil, garlic, ginger, lime juice, soy sauce, brown sugar, cayenne pepper, salt, and black pepper for at least 30 minutes.

Preheat grill to medium-high heat.

Remove chicken from marinade and grill for 6-7 minutes per side until cooked through and internal temperature reaches 165°F.

While chicken is grilling, prepare the rice according to package instructions.

In a separate pan, sauté garlic and ginger in olive oil until fragrant, about 1-2 minutes.

Add diced pineapple, red bell pepper, and carrot to the pan and cook for 3-4 minutes until softened.

Stir in cooked rice, chopped cilantro, and green onions, mixing well to combine.

Season rice with salt and pepper to taste and keep warm.

Once chicken is done, let it rest for 5 minutes before slicing.

Serve grilled chicken over a bed of pineapple-cilantro rice, garnished with additional cilantro if desired.
